Baked Guavas with Whipped Feta
Sweet, jammy roasted guavas layered over velvety garlic-tahini whipped feta and finished with aromatic pan juices.
This baked guava and whipped feta situation is one of my favourite ways to use fruit that is a little overripe. Sweet, savoury, jammy, and creamy, it is everything you want on a slice of toasted bread. Perfect for late afternoons, sharing plates, or honestly, dinner.

Ivana Sanshia’s note
Patience is key when whipping feta! Give the food processor a full 2–3 minutes to break down the feta curds until it turns completely smooth, glossy, and whipped.
